Myo Palate

About

Myo Palate is a biomanufacturing startup developing cultivated ground pork from stem cells. Myo Palate has built a vertically integrated technology stack that includes proprietary porcine stem cell lines, chemically defined low-cost growth media, optimized bioprocesses, and custom biomaterials. These capabilities enable efficient stem cell cultivation in bioreactors for large-scale meat production. Their cultivated meat production addresses the F&B market as they will be a B2B supplier of ground pork.

Project

The focus of this Development and Commercialization project will be the development of a soft sensor process analytical tool (PAT).  This tool uses spectroscopy to detect relevant molecules in the bioprocess liquid – a critical aspect of the bio-manufacturing process.  As there currently is no off-the-shelf plug and play PAT available for the real-time detection of metabolites (nutrients and waste), Myo Palate will work with the ventureLAB TDS to develop and integrate artificial intelligence (AI) across process analytics to deliver real-time metabolite prediction for stem cell bioprocessing in cultivated meat.

Impact

The project will deliver a fully integrated hardware–software solution for real-time metabolite detection in cell bioprocessing.  The development of this technology plays an important role in Myo Palate’s drive towards scalable and cost-effective production of their cultivated pork.  Additionally, the sensor technology may help Myo Palate in diversifying its revenue stream by commercializing the sensor technology.
