
Kulture Rebellion Corp. is an AI enabled biotechnology company specializing in yeast strain development and fermentation innovation for the beverage industry. The company provides custom yeast strain blends designed to enable the creation of healthy versions of traditional or new beverages while enhancing the flavor, aroma, and sensory profile of fermented beverages. The company’s tech enables the creation of fermented products across categories including styles of beer, wine, ready To Drink Cocktails, Sodas to name a few all made in standard industry fermenters. By leveraging advanced AI modeling and precision fermentation, Kulture Rebellion eliminates the need for traditional grain-based ingredients like malt, or synthetic flavouring or colouring additives while maintain shelf stability and extended shelf life without pasteurization or chemical stabilizers
Through the Technology Access Program and access to the Vineland TDS,Kulture Rebellion aims to develop and validate its AI-driven beverage fermentation platform, which integrates machine learning models to recreate beverage recipes while enhancing yeast performance, streamline fermentation processes, and improve the flavour characteristics of beverages. The proposed project will involve collecting fermentation data from different fermentation conditions, analyzing key metabolites, and using this data to refine AI-driven predictive models.
Through this project, Kulture Rebellion will achieve tangible advancements in AI-driven fermentation optimization, leading to both direct and indirect economic and environmental benefits for Ontario’s biotechnology, brewing and wine making (as production infrastructure), and fermentation industries. The project will also generate a comprehensive dataset on fermentation chemistry and strain biotransformation, providing valuable insights for optimizing fermentation efficiency and ingredient utilization.
